Banana Cake

Today I  made this yummy, yummy banana cake!! I sometimes  make banana muffins or banana cake when I have bananas that have passed their peak. Mr FH is not that fond of muffins so I made this banana and pecan cake. I made it in a spring tin and drizzled icing over it while it was still a little warm then added more pecans. I usually make it in a loaf tin and it always seems to rise up in the centre so the ring tin certainly solved that problem. I quickly set a small morning tea tray ready for a visit from some friends. I used the cutest paper napkins with shoes on (very me!!) and plain white china. Very simple, very quick and very enjoyable!!

  1. Good Morning Suzy, You have really made a simple banana cake into a Queen of banana cakes. I have never baked with a cake tin with the centre cut out, so I will have to give this a try.
I love how you have decorated this cake with icing and pecans.... it really looks gorgeous.
    Best Wishes
