Banana Cake

Today I  made this yummy, yummy banana cake!! I sometimes  make banana muffins or banana cake when I have bananas that have passed their peak. Mr FH is not that fond of muffins so I made this banana and pecan cake. I made it in a spring tin and drizzled icing over it while it was still a little warm then added more pecans. I usually make it in a loaf tin and it always seems to rise up in the centre so the ring tin certainly solved that problem. I quickly set a small morning tea tray ready for a visit from some friends. I used the cutest paper napkins with shoes on (very me!!) and plain white china. Very simple, very quick and very enjoyable!!

We are getting some lovely rains this week. They have been a long time coming!! Our seeding is nearly finished so now we just pray for rain to make everything grow!!

Good Morning Suzy, You have really made a simple banana cake into a Queen of banana cakes. I have never baked with a cake tin with the centre cut out, so I will have to give this a try.
I love how you have decorated this cake with icing and pecans.... it really looks gorgeous.

Your cake looks delish! I too, always make banana cake or bread in a muffin pan, I'll have to try out the round one, it makes for a very pretty cake. Cute napkins too btw.
